Yields 10 guests

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

For the Premix (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

For the Syrup: Put all the ingredients inside a pot, bring to a gentle boil, stirring so the sugar melts. After that, remove from the burner and let it to cool down entirely. Pour into a clean bottle, cap it and store chilled, where it will keep for around one month.

For the Cocktail Base: Pour the specified liquids into one large bottle, leave to sit for an hour, then strain preferably using cheesecloth, so it's fully clarified.

For serving: Measure 85ml of your batch mix to a mixing glass containing ice, and agitate gently for one minute to cool it down. Pour into a frosted cocktail glass or equivalent, decorate with the cranberries and finish with a brief mist of the essential oil over the top.
